There is a shed/office with power and telephone and plenty of car parking.

And of course the cafe is right next door.

ChickenOne of the questions we often get asked is, “How do you get the whites to stay around the yolks so well?” when people get our poached eggs.

There are a number of things at play here:

  1. We have our own flock of 40 free range brown shaver hens which are fed a quality diet.
  2. The eggs we use for our poached eggs and omelettes are never more than four days old.
  3. We keep eggs at room temperature.
  4. Cook in a shallow pan.
  5. Bring water to the boil and then lower the heat so the water is simmering before adding the egg.

 

We also re-home our chickens when they have finished life with us (after 18-24 months), so if you would like to take some of our hens please talk to Lynne. Many of our customers have 2-3 of our hens which are sufficient to keep their family in eggs.

cappuchinoA cappuccino has its roots in Italy and the name literally means small cap referring to the cap of microfoam on the top of the coffee.

In the Paper Mulberry we start with our standard double shot of espresso. Then the most important factor in preparing a cappuccino is the texture and temperature of the milk. When we steam the milk for a cappuccino, microfoam is created by introducing very tiny bubbles of air into the milk, giving the milk a velvety texture. The hot foamed milk is poured onto the espresso with 2 cm  of thick milk foam on top. Chocolate or cinnamon is then sprinkled on the top.

There are so many different ways to have coffee in NZ that at times it can be hard to make up your mind which to order.

Flat WhiteIn the first of our series about coffees we cover the ubiquitous Flat White.

A flat white is a coffee beverage from Australia and New Zealand. It is prepared by pouring microfoam (steamed milk from the bottom of a pitcher) over a single (30ml) or double shot (60ml) of espresso (we use a double shot as standard). It is similar to the latte and the café au lait and like other espresso based beverages it can be interpreted various ways.

The beverage is typically served in a small 150-160ml ceramic cup. Microfoam is used, resulting in a smooth and velvety texture. A flat white may incorporate latte art.
